🥕 Roasted Carrots with Everything Bagel Seasoning & Goat Cheese

Ingredients
1–2 lbs carrots, peeled and cut on a bias (or use whole baby carrots)

2–3 tbsp olive oil

1–2 tbsp everything bagel seasoning

Salt & pepper to taste

3–4 oz goat cheese (soft chèvre works best)

Optional:

Honey or hot honey

Fresh dill or chives

Lemon zest

Toasted walnuts or pistachios

🔥 Directions       Preheat oven to 425°F — you want it hot so the carrots caramelize.

Toss carrots with olive oil, salt, pepper, and half of the everything bagel seasoning.

Roast for 25–35 minutes, flipping once, until they’re golden and slightly blistered.

Plate while hot:

Spread or crumble goat cheese on the bottom of a serving plate so it softens from the heat.

Pile the roasted carrots on top.

Finish strong:

Drizzle with honey or hot honey

Sprinkle the remaining everything bagel seasoning

Add herbs, lemon zest, or nuts if you want a little extra texture
